Peach Cobbler

Ingredients For Peach Cobbler:

1 cup butter 
2 cups brown sugar
2 tsp. vanilla extract
1 tsp. cinnamon
¼ cup cornstarch
½ cup granulated sugar 
4 lbs. ripe peaches (fresh or frozen)

Method:

Melt butter and mix in brown sugar and vanilla extract.  Add the peaches & start to cook until peaches are tender and soft.

Mix cinnamon, cornstarch and granulated sugar together and make a slurry with the extra juice from the peaches. (Add water if not enough.) Make sure there are no lumps before adding in peaches.

Toss peaches in mix and cook until mix is thick.

Place into desired dish & put streusel on top.

Bake at 350*F until bubbling around the edges and streusel is a darker golden brown.

Ingredients For Streusel:

6 oz. or 2 sticks butter                         
1 ¼  cups all-purpose flour
1 ½ cups sugar       

Method:     

Mix flour and sugar together in mixing bowl with a paddle attachment. Cut cold butter into cubes and add in a little at a time. Mix until dry ingredients start to form into small pea size balls. Do not over mix.

Spread streusel over sheet pan with parchment paper evenly. Bake at 315*F until it is golden brown.

Allow to cool completely and chop up with a knife if pieces are too big.
