Chicken or Beef Kabobs Wrapped in Naan Bread

Beef Kabobs

For 4 kabobs:

Ingredients:

4 - 4 oz.
8 oz.
4 each
4 each
4 tsp.
1 cup
1/2 cup
4 tbsp.
1/2 cup
To taste
To taste
beef sirloin (cut into 1" cubes)
chimichurri marinade (recipe below)
12” bamboo skewers (soaked in water overnight)
Naan bread
olive oil
iceberg lettuce (shredded)
roma tomatoes (diced)
red onion (diced)
avocado ranch spread (recipe below)
salt
pepper

Preparation:

Place beef on skewers. Place skewers in backing dish and cover with chimichurri marinade. Cover and place in refrigerator overnight.

Remove skewers from refrigerator approximately 2 hours before cooking. Preheat grill on high and then grill skewers on medium heat for approximately 2-3 minutes on all 4 sides until a medium doneness. Season with salt and pepper as they cook. Let skewers rest for about 5 minutes prior to assembling.

Spread Naan bread with 1 teaspoon of olive oil each and place on the grill until Naan bread shows slight grill marks. Grill the other side until warm

Spread 2 tbsp. of avocado ranch spread onto Naan bread followed by lettuce, tomato, and onion. Remove meat from skewer and wrap inside bread.


Chimichurri Marinade for Beef Kabobs

Ingredients:

1/2 cup
1/2 cup
1/2 cup
1/4 cup
5 cloves
1/4 cup
1/4 cup
1 1/2 cup
To taste
To taste

parsley (chopped)
cilantro (chopped)
oregano (chopped)
chives (minced)
garlic (minced)
lime juice
red wine vinegar
olive oil
salt
pepper


Preparation:

Combine all ingredients and whisk until blended.

lemon rosemary garlic marinade (recipe below)
12” bamboo skewers (soaked in water overnight)
Naan bread
olive oil
iceberg lettuce (shredded)
roma tomatoes (diced)
red onion (diced)
avocado ranch spread (recipe below)
salt
pepper

Ingredients:

1/4 cup
1/4 cup

1/3 cup
1/4 cup
To taste
To taste

oregano (chopped)
rosemary (chopped)
garlic (minced)
olive oil
lemon juice
salt
pepper


Preparation:

Combine all ingredients and whisk until blended.

Avocado Ranch Spread

Ingredients:

4 oz.
2 each
1/2 each
1/2 tsp.
To taste
To taste

Ranch dressing
Hass avocados (ripened)
lemon (juiced)
chipotle in adobo (canned)
salt
white pepper


Preparation:

Puree first four ingredients in blender until smooth. Season with salt and white pepper to taste.
