Fusilli Pasta

Fusilli pasta cooked according to directions - set aside |
Cheese Sauce
Ingredients:

Gruyere cheese - shredded
Smoked Gouda cheese, shredded
American cheese, cubed
Velveeta brand cheese, cubed
heavy cream
Chipotle in Adobo, blended until smooth |
Preparation:
In a medium sauce pan heat heavy cream over medium heat, add cheeses. Whisk until cheeses are fully incorporated. Add small amounts of pureed Chipotle peppers until you reach the desired amount of “heat”.
Adobo Pork
Ingredients:

boneless pork loin, rubbed with Adobo Rub (recipe below) |
Preparation:
Preheat oven to 320 degrees. Bake pork loin until internal temperature reaches 145 degrees. Allow pork loin to rest for 20 minutes. Dice into small ¼ inch sized cubes.
Adobo Rub
Ingredients:

ground ginger
garlic powder
onion powder
ground cumin
dark brown sugar
paprika
Ancho chili powder

Preparation:
Mix all ingredients. Cover tightly and store until needed.
Chipotle Mac N Cheese Preparation:
Mix chipotle cheese sauce with cooked fusilli pasta and top with cubed Adobo pork.
