Ingredients
6 3/4 cups old fashioned oats
2 cups sliced almonds
1 cup pecan pieces
¾ cup simple syrup
To make simple syrup, heat ¾ cup sugar and ¾ cup water
until sugar dissolves completely
40 oz. mini marshmallows
2 Tbsp. vanilla extract
2 sticks whole unsalted butter, room temperature
2/3 cup chopped dried cherries or raisins
3 ½ cups Rice Krispies cereal
Method
In a bowl, mix the oats, almonds, and pecan pieces. Toss with simple syrup.
Spread oat mixture onto a sheet pan lined with parchment paper. Place in a 350°F oven and toast until light golden brown. Keep warm.
While oats and nuts are toasting, melt marshmallows. Once melted, add vanilla and butter. Stir until well mixed.
Mix together oats and nuts with dried fruit and Rice Krispies cereal.
Pour hot marshmallow over mix and stir with a wooden spoon. Be careful this product will be very hot.
Put wax paper on a sheet pan or baking dish and pour mix into the lined pan. Press down until a flat and even layer has been formed.
Let cool to room temperature and cut to desired portions.
