Swan Dolphin Signature Burger
With Caramelized Onions and Avocado Bacon Aioli

Ingredients:

2 tbsp.
2 each
1 oz.
1 each
1 each
4 oz. burger patties
applewood bacon slices - cooked until crispy
avocado bacon aioli (recipe below)
american cheese slices
caramelized onions (recipe below)
Roma tomato (4 - 1/8" thick slices)
sesame seed bun

Preparation:

Season burger patties with salt and pepper. Place seasoned patties on medium hot grill. Grill each side for approximately 2 minutes per side.

With 1 minute left to go, place a slice of American cheese on each burger patty.
Toast the sesame seed bun on the grill. Once toasted, spread the bacon-avocado aioli on both the top and bottom portions of the bun.

Remove the burgers from the grill. Place three pieces of crispy bacon on one of the patties.

Place the other burger patty on top of the bacon. Place both burger patties on the bottom portion of the bun. Top with caramelized onion and tomato slices.

Place top portion of the burger bun on to the patties and serve immediately.

 

Avocado Bacon Aioli

Ingredients:

1 cup
1/4 cup
3 tbsp.
guacamole (see recipe below)
mayonnaise
finely chopped bacon

Preparation:

Combine all ingredients.

 

Guacamole

Ingredients:

1 each
1/2 tsp.
1/2 tsp.
1/2 tsp.
1/2 each
1/2 each
1 tbsp.
1 clove
1/2 each
Haas avocados (halved, seeded and peeled)
lime - juiced
Kosher salt
ground cumin
cayenne pepper
medium onion (diced)
jalapeño pepper (seeded and minced)
cilantro (chopped)
garlic (minced)
medium sized tomato (diced)

Preparation:

In a large bowl place the avocado and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocado has been coated. Using a potato masher add the salt, cumin, and cayenne to avocados and mash. Fold in the onions, jalapeño, tomatoes, cilantro, and garlic. Add 1 tbsp. of the reserved lime juice. Let sit at room temperature for 1 hour then serve.

 

Caramelized Onions

Ingredients:

2 tbsp.
2 each
To taste
To taste
unsalted butter
medium yellow onions (halved and sliced paper thin)
Kosher salt
freshly ground black pepper

Preparation:

Melt the butter in a large frying pan over medium to low heat until foaming. Add the onions, and let them cook, stirring rarely, until they are deep golden brown and caramelized, about 45 minutes. Season well with salt and pepper, remove from the pan, and let cool.
