Florida Black Fish with Roasted Vegetables

Ingredients:
8 Oz Florida Black Fish
2 Oz Medium Diced Potatoes
2 Oz Medium Diced Carrots
1 Oz Medium Diced Red Onion
2 Tsp Unsalted Butter
1 Tsp Olive Oil
1 Tsp Chopped Thyme
2 Tsp Brown Sugar
White Wine
Salt and Pepper to taste

Method of Preparation:
Combine potatoes, carrots and red onion in baking pan. Bake at 350° for 20 minutes or until tender. Finish vegetables in a sauté pan with the chopped thyme and brown sugar.

Salt and pepper the fish. Heat sauté pan with oil. Sauté fish on both sides. Finish it with white wine in the oven at 350° for 7-10 minutes or until done. When done, remove the fish and make the sauce with the remaining liquid, adding the unsalted butter slowly.

Presentation:
Place fish in the middle of the plate. Place vegetables around the fish. Top off fish and vegetables with sauce.
