                  crab cake (recipe below) 
                    Old Bay aioli (recipe below) 
                    mini slider bun 
                  bibb lettuce 
                  roma tomato

              Preparation: 
               
              Heat pan and sear crab cake on both sides. While crab cake is cooling, toast slider bun. Assemble each by placing Old Bay agile onto bun with crab cake, le<uce and tomato. 
               
               
              
                
                  Crab Cake 
                       Ingredients:

                  1 lb. 
                  1/3 cup 
                  2 each 
                  1/2 cup 
                  4 tbsp. 
                  1 tbsp. 
                  1/4 cup 
                  1/4 cup
                   | 
                  jumbo lump crab meat (pickled) 
                   tarragon dressing (recipe below) 
                  whole egg 
                  Ritz crackers (finely crushed) 
                  lemon juice 
                  Old Bay seasoning 
                  chives (minced) 
                  parsley (minced) | 
                 
               
              Preparations:
  
                Mix tarragon dressing, eggs, lemon juice, Old Bay, chives, and parsley together All combined. Fold in crab meat. Fold in Ritz crackers trying not to break up the lumps. Let sit. (Crackers will soak up the dressing causing it to bind.) Form patties and prepare for searing. 
                 
               
              
                
                  Tarragon Dressing 
                     Ingredients:

                  4 cups 
                    2 each

                    1/2 oz. 
                    1/2 oz. 
                    1/4 oz. | 
                  mayonnaise 
                    lemons (for juicing) 
                    lemon (for zesting) 
                    garlic (smashed into a paste) 
                    chives (minced) 
                    parsley (minced) 
                  tarragon (chopped) | 
                 
               
              Preparations: 
                 
                In a mixing bowl add mayonnaise, fresh herbs and garlic. Juice 2 lemons and zest 1 lemon. Add to mixing bowl. Mix all together. 
                 
               
              
                
                  Old Bay Aoili 
                     Ingredients: 
                      | 
                 
                
                  16 oz. 
                    1 oz. 
                    4 oz. 
                  1 oz. | 
                  mayonnaise 
                    garlic (4 cloves) 
                    fresh lemon juice 
                  Old Bay seasoning | 
                 
               
              Preparations: 
                 
              Blend all ingredients together in a blender until smooth.  |
