Preparation: Saute onion in the 1 tbsp butter and set aside. In a large pot, whisk together melted butter and flour over a medium heat for about 3-4 minutes. Slowly whisk in milk, cream, and chicken stock. Let simmer for approximately 20 minutes. Add broccoli, carrot, and sautéed onions. Let this simmer for approximately 25 minutes on medium heat until the carrots and broccoli are tender. Add nutmeg, salt and pepper to taste, and cheddar cheese. Allow cheese to become melted and then serve.
