Tuna Tower

Ingredients:
5 Oz Fine Diced Sushi Tuna
1/4 Oz Fine Diced Cucumbers
1/4 Oz Fine Diced Red Onions
1/2 Fl. Oz Light Soy Sauce
1/2 Fl. Oz Sesame Oil
1/4 Oz Ginger and Garlic Paste
Salt and Pepper (To Taste)
1/4 Oz Beet and Carrot Curls
2 Fl. Oz Soy Ginger Glaze
1/4 Fl. Oz Wasabi Oil
1 Each Flat Leaf Parsley

Method of Preparation:
In a bowl, mix the cucumbers, red onions, sesame oil, salt and pepper (to taste). In a different bowl, mix the tuna, soy sauce, ginger, garlic paste, salt and pepper (to taste).

Presentation:
In the center of a plate, place a ring mold. Put the first layer of tuna mix in the mold. Put the second layer of vegetable mix on top of the tuna. Put the last layer of tuna mix on top of the vegetables. Drisel with soy ginger glaze and wasabi oil. Garnish with carrots, beets and parsley. Remove the ring mold. Serve.
