Fourth of July Family Picnic Featuring Pulled Pork Sandwiches

Ingredients For Eggplant Spread:
5 Lbs. Eggplant
4 Large Tomatoes, Diced
1 1/2 Cup Garlic, Chopped
1 1/2 Cup Cilantro
3 Tbsp. Cumin
Small Amount of Chicken Stock
Salt and Pepper (To Taste)

Ingredients For Pulled Pork:
8 Lbs. Pork Loin
2 Cups Red Wine
½ Cup White Vinegar

Ingredients For Paprika Mayonnaise:
2 Cups Mayonnaise
1 Tbsp. Paprika
1 Tsp. Salt
1/4 Tbsp. White Pepper
3 Tbsp. Jerk Seasoning

Ingredients For Sandwich:
Hoagie Rolls
Red Tomato, Sliced
Yellow Tomato, Sliced
Red Onion, Shaved

Optional Tri Color Salad or Side of Your Choice

Method of Preparation For Eggplant Spread:
Roast eggplants for about an hour, until very tender inside, almost mushy. Scoop meat out with as little seeds as possible. Chop eggplant meat. In a sauté pan, sauté garlic and tomatoes, for about a minute. Add eggplant to sauté pan and season with spices. Deglaze with chicken stock (add a small amount, enough to make the meat a little wet, and lightly mix.) Reduce to dry (cook all of the stock out, until meat is slightly moist.) Finish with fresh cilantro. Set aside and let cool.

Method of Preparation For Pulled Pork:
Sear pork on all sides in a large pot. Add ½ gallon of water, red wine and white vinegar to pot and cover tightly. Place over medium heat and cook until the pork shreds. Remove pork from pot and set aside to let cool.

Method of Preparation For Paprika Mayonnaise:
Mix mayonnaise, paprika, salt, white pepper and jerk seasoning together. Set aside.

Method of Preparation For Sandwich:
Preheat oven to 400°. Lightly butter hoagie rolls and toast in oven for about 3 minutes. Spread 3 ounces of eggplant spread on top side of roll. Spread a small amount of paprika mayonnaise on the bottom side of roll. Place 6 ounces of room temperature pork on bottom side of roll. Place red and yellow tomato slices on top of pork and top with ½ ounce of shaved onions. Slice sandwich in halve.


Presentation:
Place the sandwich in the center of the plate. Place the optional tri color salad or side of your choice in the top corner of the plate. Serve.

Serving Size: 12 Sub Sandwiches.
