Bruschetta BLT


Ingredients:
1 Lb. Tomatoes
½ Lb. Fresh Mozzarella
1 Tbsp. Extra Virgin Olive Oil
1 Clove Garlic
6 Large Fresh Basil Leaves
1 Oz. Red Wine Vinegar
Salt and Pepper To Taste
12 Oz. Thinly Sliced Prosciutto Ham
6 "Tuscan Style" Rolls or Bread of Choice
18 Washed Fresh Basil Leaves
Lemon Olive Oil

Method of Preparation:
Dice tomatoes and mozzarella into ¼" pieces. Mince garlic clove and chop the 6 large fresh basil leaves. In large bowl, mix the diced tomatoes, mozzarella, minced garlic and chopped basil leaves. Coat the mixture with olive oil and red wine vinegar. Season with salt and pepper. Set aside for service.

Brush "Tuscan" roll or bread of choice with lemon olive oil and place it on a griddle until brown. Once browned, remove from griddle and place 2 oz. prosciutto ham on bottom half of roll. Then cover the prosciutto ham with 4 oz. of the tomato and mozzarella mixture.

Presentation:
Place 3 fresh basil leaves on top half of roll and serve "open faced" with choice of accompaniment.
