Chef Mehmet
Mehmet Bilbay is a Chef specializing in modern and Japanese cuisine, known for
his precision, creativity, and refined approach to sushi. He studied Gastronomy and
Culinary Arts in Istanbul, where he developed a strong foundation in global techniques
and culinary artistry. His experience includes luxury resort dining at the Boca Raton
Resort, Major food group as well as Sushi by Bou and one of Orlando’s signature sushi
destinations, where he honed his expertise in high-end, guest-focused experiences.
At Kimonos, Chef Mehmet brings a modern yet respectful interpretation of Japanese
cuisine, emphasizing exceptional ingredients, clean flavors, and an elevated dining
