The culinary team is led by Executive Chef Robert Ciborowski, a master of eco-friendly kitchen creations. His organic menus draw rave reviews from banquet guests. Wherever possible, the resort uses locally grown and organic ingredients to provide guests with the highest quality dishes.

Executive Pastry Chef Laurent Branlard is the only two-time World Pastry Champion. Branlard is known for his intricate, pulled-sugar confections that look similar to pieces of glass artwork but are 100 percent edible. During the holiday season, guests can view one of Branlard’s largest and most complex sculptures in the resort’s lobby – a 2,000-pound chocolate holiday display featuring Santa, a fireplace with stockings, Christmas tree, toy train and 7-foot tall nutcracker.

The resort’s extensive beverage program employs more than 70 sommeliers and rivals those in fine dining venues globally. Led by Director of Food and Beverage Tony Porcellini, the wine program features more than 1,400 selections, including organic and rare vintages, plus tastes from Greece, Turkey, Israel and South Africa. The resort’s assistant director of food and beverage, Luciano Sperduto, is one of fewer than 100 B.A.R. certified food and beverage professionals in the country. SIGNATURE DININGTodd English’s bluezoo (Dolphin): This AAA Four-Diamond creation of internationally renowned celebrity chef Todd English features coastal cuisine with both international and New American culinary influences. From the signature simply fish to the two-pound Maine “Cantonese” lobster, bluezoo’s menu serves blissful bites for every palate. The restaurant’s award-winning design by Jeffrey Beers captures an ethereal, underwater theme with sophistication. Kimonos (Swan): Dark teakwood, colorful kimonos and an intimate atmosphere are the inviting hallmarks of this authentic Japanese sushi restaurant. Kimonos’ house specialties include gyoza, octopus, shrimp and the signature dragon roll. CASUAL DININGGarden Grove (Swan): Set in a tranquil atmosphere featuring a 25-foot oak tree centerpiece, Garden Grove offers breakfast, lunch and dinner. Special memories are in store during evening dinners and weekend breakfasts featuring beloved Disney characters. For dinner, the restaurant features an unlimited buffet of fresh, gourmet vegetables, soups and salads, accompanied by a delectable selection of prime rib, half roasted chicken, or cedar plank salmon and chef’s created sides. FAST AND FABULOUSThe Fountain (Dolphin): This ice cream fountain and snack shop is the ideal stop for crisp salads, custom-grilled burgers and a delectable array of hearty sandwiches and sweet treats. It’s hard to resist the hand-dipped and soft-serve ice cream. Open for lunch and dinner.

Picabu (Dolphin): Picabu, for whom the restaurant is named, is an artful animated wood-carved character adding excitement to the dining experience. The 24-hour fare, served cafeteria style, includes hot and cold sandwiches, pizza and other favorites, perfect for family dining. A Taqueria section allows guests to custom-order tacos and burritos.

POOL-SIDE PANACHECabana Bar and Beach Club (Dolphin): Kick back poolside for a flatbread, fish tacos or grass-fed organic burger. Wispy white drapes, exotic woods and glass floor tiles surround you with South-Beach- chic ambiance. The outdoor Cabana Bar and Beach Club encourages everyone to “come as they are” for savory treats like the soft shell crab “Spider Roll” and charred Ahi tuna tataki.
